Ube Cheesecake Recipe
A delicious and creamy ube cheesecake with a graham cracker crust.

Crust
- 1.5 cups graham cracker crumbs
- 0.25 cup sugar
- 0.5 cup melted butter
Filling
- 2 cups cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup ube halaya (purple yam jam)
- 0.5 cup heavy cream
- 1 teaspoon vanilla extract
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
Beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
Mix in ube halaya, heavy cream, and vanilla extract until well combined.
Pour filling over crust. Bake for 1 hour or until set.
Let cool, then refrigerate for at least 4 hours before serving.
