Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup sugar
  • 0.5 cup melted butter

Filling

  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup ube halaya (purple yam jam)
  • 0.5 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
  4. Mix in ube halaya, heavy cream, and vanilla extract until well combined.
  5. Pour filling over crust. Bake for 1 hour or until set.
  6. Let cool, then refrigerate for at least 4 hours before serving.
