Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup pineapple diced
  • 1 cup mango diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine the cooked quinoa, pineapple, mango, red onion, and cilantro.
  5. 5. Drizzle with lime juice and olive oil. Season with salt and black pepper to taste. Toss to combine.
  6. 6. Serve chilled or at room temperature.
