Ingredients

  • 4 large eggs
  • 2 cups granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon anise extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder

Instructions 

  1. Beat eggs until thick and lemon-colored.
  2. Gradually add sugar, beating until well combined.
  3. Stir in salt and anise extract.
  4. Sift together flour and baking powder; gradually add to egg mixture.
  5. Roll out dough to ½ inch thickness on a floured surface.
  6. Press springerle mold firmly into dough to make designs.
  7. Cut out cookies and place on greased baking sheets.
  8. Let cookies dry at room temperature for 24 hours.
  9. Preheat oven to 300°F (150°C).
  10. Bake for 25 minutes or until pale golden.
