Ingredients

  • 1 lb Tomatillos husked and rinsed
  • 2 Jalapeños stemmed
  • 1 Small onion quartered
  • 2 cloves Garlic peeled
  • 1 cup Cilantro chopped
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place tomatillos, jalapeños, onion, and garlic on a baking sheet. Roast for 10 minutes.
  3. Transfer roasted vegetables to a blender. Add cilantro, lime juice, and salt. Blend until smooth.
  4. Adjust seasoning if needed. Serve immediately or refrigerate.
