Tofu Mayonnaise Recipe

Main Ingredients
- 1 cup silken tofu
- 2 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup olive oil
1. Add all ingredients except olive oil to a blender.
2. Blend until smooth.
3. Slowly add olive oil while blending until emulsified.
4. Taste and adjust seasoning if needed.
5. Store in an airtight container in the fridge for up to a week.
