Ingredients 

Main Ingredients

  • 1 block Tofu firm, drained and cubed
  • 1 tablespoon Vegetable oil
  • 1 can Coconut milk
  • 2 tablespoon Green curry paste
  • 1 cup Vegetables mixed, chopped (e.g., bell peppers, carrots, broccoli)
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1 handful Fresh basil chopped

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Add the coconut milk and bring to a simmer.
  4. Add the tofu and vegetables, and cook for 10-15 minutes until the vegetables are tender.
  5. Stir in the soy sauce and sugar, and cook for another 2-3 minutes.
  6. Remove from heat and stir in the fresh basil before serving.
