Crust
- 1.5 cups graham cracker crumbs
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup mascarpone cheese
- 4 large eggs
- ¼ cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder, for dusting
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add the mascarpone cheese and mix until combined.
Add the eggs one at a time, mixing well after each addition. Stir in the coffee and vanilla extract.
Pour the filling over the crust. Bake for 60 minutes or until the center is set. Let it cool to room temperature, then refrigerate for at least 4 hours.
Before serving, dust the top with cocoa powder.
