Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • ½ cup peanut butter creamy
  • ¼ cup soy sauce low sodium
  • 2 tablespoon lime juice freshly squeezed
  • 2 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger grated
  • 2 cloves garlic minced
  • 1 cup carrots julienned
  • 1 cup bell peppers sliced
  • ¼ cup green onions chopped
  • ¼ cup cilantro chopped
  • ¼ cup crushed peanuts for garnish

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, ginger, and garlic until smooth.
  3. 3. Toss the cooked noodles with the peanut sauce until well coated.
  4. 4. Add the carrots, bell peppers, green onions, and cilantro. Toss to combine.
  5. 5. Garnish with crushed peanuts before serving.
