Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • 1 cup cucumber, thinly sliced
  • ¼ cup chopped cilantro
  • ¼ cup chopped peanuts

Peanut Dressing

  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions 

  1. Cook the rice noodles according to the package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked noodles, shredded carrots, red bell pepper, cucumber, cilantro, and chopped peanuts.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, grated ginger, and minced garlic until smooth.
  4. Pour the peanut dressing over the noodle mixture and toss to combine.
  5. Serve immediately or chill in the fridge for 30 minutes for a cold salad.
