Instructions
Cook the rice noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha (if using), and warm water until smooth.
In a large bowl, combine cooked noodles, shredded carrots, and sliced bell peppers.
Pour the peanut sauce over the noodle mixture and toss to coat evenly.
