Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • ¼ cup chopped cilantro

Peanut Sauce

  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tablespoon lime juice
  • 2 tablespoon honey
  • 1 tablespoon sriracha optional
  • ¼ cup warm water

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha (if using), and warm water until smooth.
  3. In a large bowl, combine cooked noodles, shredded carrots, and sliced bell peppers.
  4. Pour the peanut sauce over the noodle mixture and toss to coat evenly.
  5. Garnish with chopped cilantro before serving.
