  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 cup coconut milk
  • 1 tablespoon vegetable oil
  • 1 cup bell pepper sliced
  • 1 cup carrot sliced
  • 1 cup broccoli florets

Instructions 

  1. 1. Heat oil in a skillet over medium heat. Add chicken and cook until browned.
  2. 2. In a mixing bowl, combine peanut butter, soy sauce, lime juice, honey, garlic, ginger, and coconut milk. Stir until smooth.
