Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 cup green curry paste
  • 400 ml coconut milk
  • 500 g chicken breast, sliced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup basil leaves

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 2-3 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the sliced chicken breast and cook for 10 minutes.
  5. Add the broccoli and bell peppers, and cook for another 10 minutes.
  6. Stir in the fish sauce and brown sugar, and cook for 2 more minutes.
  7. Remove from heat and stir in the basil leaves.
  8. Serve hot with steamed rice.
