Main Ingredients
- 1 can black-eyed peas drained and rinsed
- 1 can corn drained
- 1 cup cherry tomatoes halved
- 1 cup bell pepper chopped
- ½ cup red onion finely chopped
- ¼ cup cilantro chopped
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
In a large mixing bowl, combine black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and black pepper.
Pour the dressing over the vegetable mixture and toss to coat evenly.
Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Serve chilled with tortilla chips or as a side dish.
