Ingredients 

Main Ingredients

  • 5 large egg whites
  • 1 cup granulated sugar
  • 1 ½ cups unsalted butter room temperature
  • 1 teaspoon vanilla extract

Instructions 

  1. Combine egg whites and sugar in a heatproof bowl. Place over a pot of simmering water.
  2. Whisk constantly until sugar is dissolved and mixture reaches 160°F.
  3. Transfer mixture to a stand mixer. Whip on high until stiff peaks form and the mixture is cool.
  4. Add butter a few tablespoons at a time, mixing well after each addition.
  5. Mix in vanilla extract until smooth.
