  • 1 cup mashed sweet potatoes
  • 1.5 cups all-purpose flour
  • 2 tablespoon brown sugar
  • 2 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 2 large eggs
  • 4 tablespoon melted butter
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your waffle iron.
  2. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the mashed sweet potatoes, milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Lightly grease the waffle iron and pour the batter onto the iron. Cook according to the manufacturer's instructions until golden brown and crisp.
