Main Ingredients
- 4 medium Sweet Potatoes peeled and cubed
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoon Fresh Rosemary chopped
- 2 tablespoon Fresh Thyme chopped
Preheat your oven to 400°F (200°C).
In a mixing bowl, toss the sweet potatoes with olive oil, salt, and pepper.
Spread the sweet potatoes on a baking sheet in a single layer.
Roast in the oven for 20 minutes.
Remove from oven, sprinkle with rosemary and thyme, and toss to coat.
Return to the oven and roast for an additional 10 minutes, or until tender and golden brown.
Serve hot.
