- 2 large sweet potatoes peeled and diced
- 1 medium onion diced
- 1 medium bell pepper diced
- 2 cloves garlic minced
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 0.25 teaspoon cumin
1. Heat olive oil in a large skillet over medium heat.
2. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
3. Add onion, bell pepper, and garlic to the skillet. Cook for another 5-7 minutes until vegetables are tender.
4. Season with salt, black pepper, paprika, and cumin. Stir well to combine.
