Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 avocado sliced
  • 0.25 cup chopped cilantro
  • 1 lime cut into wedges
  • 0.5 cup crumbled feta cheese optional

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes, until tender.
  4. Warm tortillas in a skillet or microwave.
  5. Fill tortillas with roasted sweet potatoes, black beans, avocado slices, and cilantro.
  6. Top with feta cheese if using.
  7. Serve with lime wedges.
