Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, erythritol, egg, and vanilla extract. Mix until well combined.
  3. Roll the dough into 1-inch balls and place them on a baking sheet.
  4. Flatten each ball with a fork, making a crisscross pattern.
  5. Bake for 12-15 minutes, or until the edges are golden brown.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
