Ingredients

  • 1 lb Pork Tenderloin
  • 1 cup Spinach chopped
  • ½ cup Feta Cheese crumbled
  • 1 Garlic Clove minced
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the pork tenderloin by slicing it down the middle, being careful not to cut all the way through.
  3. Season the inside with salt and pepper.
  4. In a bowl, mix the spinach, feta cheese, garlic, and olive oil.
  5. Spread the spinach mixture over the inside of the pork tenderloin.
  6. Roll up the tenderloin and tie it with string to secure.
  7. Place the tenderloin in a baking dish and roast for 40 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let rest for 10 minutes before slicing and serving.
