Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine rice, black beans, corn, cheese, chili powder, cumin, salt, and pepper.
  3. Stuff the bell peppers with the mixture and place them in a baking dish.
  4. Bake for 40 minutes, or until peppers are tender.
