Instructions 

  1. In a saucepan, combine strawberries, rhubarb, and sugar. Cook over medium heat until fruit is soft and mixture thickens, about 10 minutes. Let cool.
  2. In a mixing bowl, whisk together Greek yogurt and vanilla extract.
  3. Layer the yogurt mixture, fruit compote, and granola in serving glasses. Repeat layers until glasses are filled.
  4. Serve immediately or refrigerate until ready to serve.
