Strawberry Rhubarb Parfait
A delightful and refreshing parfait combining the tartness of rhubarb with the sweetness of strawberries.

Main Ingredients
- 1 cup Strawberries, chopped
- 1 cup Rhubarb, chopped
- ½ cup Sugar
- 1 teaspoon Vanilla extract
- 2 cups Greek yogurt
- ¼ cup Granola
In a saucepan, combine strawberries, rhubarb, and sugar. Cook over medium heat until fruit is soft and mixture thickens, about 10 minutes. Let cool.
In a mixing bowl, whisk together Greek yogurt and vanilla extract.
Layer the yogurt mixture, fruit compote, and granola in serving glasses. Repeat layers until glasses are filled.
Serve immediately or refrigerate until ready to serve.
