Strawberry Rhubarb Hand Pie Recipe
Delicious hand pies with a sweet and tangy strawberry rhubarb filling.

Filling
- 1 cup Strawberries hulled and diced
- 1 cup Rhubarb diced
- ½ cup Sugar
- 1 tablespoon Cornstarch
- 1 tablespoon Lemon juice freshly squeezed
Dough
- 2 cups All-purpose flour
- 1 teaspoon Salt
- 1 cup Unsalted butter cold and cubed
- ¼ cup Ice water more if needed
Egg wash
- 1 Egg beaten
- 1 tablespoon Milk
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Set aside.
In another bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms.
Roll out dough on a floured surface. Cut into 4-inch circles. Place a spoonful of filling in the center of each circle. Fold and seal edges with a fork.
Place hand pies on the prepared baking sheet. Brush with egg wash. Bake for 25 minutes or until golden brown.
Let cool before serving.
