Strawberry Rhubarb Brie Bites
Delicious bite-sized appetizers combining the sweetness of strawberries, the tartness of rhubarb, and the creaminess of brie.

Main Ingredients
- 1 cup Strawberries diced
- 1 cup Rhubarb diced
- 2 tablespoons Sugar
- 1 tablespoon Lemon juice
- 1 sheet Puff pastry thawed
- 4 ounces Brie cheese cut into small pieces
Preheat the oven to 375°F (190°C).
In a saucepan, combine strawberries, rhubarb, sugar, and lemon juice. Cook over medium heat until the mixture thickens, about 10 minutes. Let it cool.
Cut the puff pastry into 12 squares and place them into a muffin tin, pressing them down to form cups.
Place a piece of brie in each puff pastry cup, then top with a spoonful of the strawberry-rhubarb mixture.
Bake for 15-20 minutes, or until the puff pastry is golden brown and the cheese is melted. Serve warm.
