Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Filling

  • 24 oz cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • ½ cup sour cream
  • ½ cup strawberry puree

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well.
  4. Add eggs one at a time, beating well after each addition. Stir in sour cream and strawberry puree.
  5. Pour filling over crust. Bake for 60 minutes or until center is set. Let cool, then refrigerate for at least 4 hours before serving.
