Strawberry Basil Cheesecake
A delightful cheesecake with a fresh twist of strawberries and basil.

Crust
- 1.5 cups Graham cracker crumbs
- 0.5 cup Melted butter
Filling
- 24 oz Cream cheese softened
- 1 cup Granulated sugar
- 3 units Large eggs
- 1 teaspoon Vanilla extract
- 1 cup Strawberries pureed
- 2 tablespoon Fresh basil chopped
Preheat your oven to 325°F (163°C).
Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Fold in the pureed strawberries and chopped basil. Pour the mixture over the crust.
Bake for 60 minutes or until the center is set. Let it cool before refrigerating for at least 4 hours.
