Ingredients

  • 2 ripe bananas mashed
  • 1 cup strawberries diced
  • ½ cup chopped nuts walnuts or pecans
  • cup melted butter
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1 ½ cups all-purpose flour

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas and melted butter.
  3. Add the beaten egg, vanilla extract, and sugar. Mix well.
  4. Sprinkle the baking soda and salt over the mixture and mix in.
  5. Add the flour and mix until just incorporated. Do not overmix.
  6. Fold in the diced strawberries and chopped nuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
