Ingredients 

Main Ingredients

  • 3 lb Chuck Roast
  • 2 tablespoon Olive Oil
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium-high heat.
  2. 2. Season the chuck roast with salt and pepper, then sear on all sides until browned. Remove and set aside.
  3. 3. In the same pot, add the sliced onion and cook until softened. Add the garlic and cook for another minute.
  4. 4. Stir in the tomato paste, thyme, and rosemary. Cook for another minute.
  5. 5. Return the roast to the pot and pour in the beef broth. Bring to a simmer.
  6. 6. Cover and reduce heat to low. Cook for about 2.5 to 3 hours, or until the meat is tender.
  7. 7. Add the carrots and potatoes to the pot. Continue cooking for another 30 minutes, or until the vegetables are tender.
  8. 8. Adjust seasoning with salt and pepper if needed. Serve hot.
