Ingredients 

Main Ingredients

  • 2 pieces Steak (filet mignon or ribeye) about 1 inch thick
  • 2 tablespoon Black peppercorns coarsely crushed
  • 1 teaspoon Salt
  • 2 tablespoon Butter
  • 1 tablespoon Olive oil
  • ½ cup Heavy cream
  • ¼ cup Cognac or brandy

Instructions 

  1. 1. Season steaks with salt and press crushed peppercorns into both sides.
  2. 2. Heat olive oil and butter in a skillet over medium-high heat.
  3. 3. Sear steaks for 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.
  4. 4. Remove steaks and let rest. Pour cognac into skillet, carefully ignite to burn off alcohol.
  5. 5. Add heavy cream, stir, and cook until sauce thickens. Serve sauce over steaks.
