Ingredients 

Main Ingredients

  • 1 medium butternut squash peeled and cubed
  • 2 tablespoon olive oil
  • 1 lb pasta your choice
  • 10 leaves sage fresh
  • 1 cup parmesan cheese grated
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. In a skillet, heat a bit of olive oil and fry the sage leaves until crispy. Remove and set aside.
  5. In the same skillet, combine the roasted squash and cooked pasta. Toss with grated parmesan cheese.
  6. Top with crispy sage leaves and serve immediately.
