  • 1 large butternut squash peeled, seeded, and cubed
  • 2 apples peeled, cored, and chopped
  • 1 onion chopped
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cinnamon

Instructions 

  1. 1. In a large pot, sauté the chopped onion until translucent.
  2. 2. Add the butternut squash, apples, and vegetable broth. Bring to a boil.
  3. 3. Reduce heat and let it simmer for about 20-25 minutes, until the squash and apples are tender.
