Ingredients 

Main Ingredients

  • 2 medium acorn squash
  • 1 pound sausage
  • 1 cup breadcrumbs
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. Brush the inside of the squash with olive oil and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet and bake for 30 minutes.
  5. In a mixing bowl, combine sausage, breadcrumbs, and shredded cheese.
  6. Remove the squash from the oven, flip them over, and stuff with the sausage mixture.
  7. Return to the oven and bake for an additional 15 minutes, or until the sausage is cooked through.
