  • 1 package Cheese tortellini about 9 ounces
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 2 cups Fresh spinach chopped
  • 1 cup Cherry tomatoes halved
  • ¼ cup Parmesan cheese grated
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the tortellini according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. 3. Add chopped spinach and halved cherry tomatoes to the skillet. Cook until the spinach is wilted and the tomatoes are softened.
  4. 4. Add the cooked tortellini to the skillet and toss to combine. Season with salt and pepper to taste.
  5. 5. Serve hot, topped with grated Parmesan cheese.
