Ingredients

  • 2 cups Spinach fresh, chopped
  • 1 cup Mushrooms sliced
  • 1 cup Cheese shredded
  • 8 pieces Tortillas
  • 1 cup Enchilada Sauce

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, sauté mushrooms until tender. Add spinach and cook until wilted.
  3. Fill tortillas with the spinach and mushroom mixture, then roll them up and place in a baking dish.
  4. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  5. Bake for 20-25 minutes, until cheese is melted and bubbly.
