Ingredients 

Main Ingredients

  • 6 Eggs
  • 1 cup Fresh spinach, chopped
  • ½ cup Onion, diced
  • ½ cup Bell pepper, diced
  • ½ cup Cheese, shredded Cheddar or your choice
  • 2 tablespoon Olive oil
  • ¼ teaspoon Salt to taste
  • ¼ teaspoon Black pepper to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. In a mixing bowl, whisk the eggs, salt, and black pepper together.
  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle the shredded cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is golden brown.
  7. Remove from the oven and let it cool slightly before slicing and serving.
