  • 1 cup Fresh spinach chopped
  • ¼ cup Feta cheese crumbled
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Beat the eggs in a mixing bowl and season with salt and pepper.
  2. 2. Heat olive oil in a non-stick skillet over medium heat.
  3. 3. Add the chopped spinach and cook until wilted.
  4. 4. Pour the beaten eggs into the skillet and cook until the edges start to set.
  5. 5. Sprinkle the crumbled feta cheese over one half of the omelette.
  6. 6. Fold the omelette in half and cook for another minute or until the cheese is melted.
  7. 7. Serve hot.
