  • 6 eggs
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  3. Add chopped spinach to the skillet and cook until wilted.
  4. In a mixing bowl, whisk together eggs, salt, and pepper. Pour the egg mixture over the spinach and onions in the skillet.
  5. Sprinkle crumbled feta cheese evenly over the top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.
  7. Remove from the oven and let cool slightly before slicing and serving.
