Ingredients

  • 2 cups Spinach fresh, chopped
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 8 pieces Tortillas corn or flour
  • 2 cups Enchilada Sauce

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, ricotta cheese, and half of the shredded cheese.
  3. Fill each tortilla with the spinach mixture and roll up. Place seam-side down in a baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with remaining shredded cheese.
  5. Bake for 20-25 minutes, until cheese is melted and bubbly.
  6. Serve hot and enjoy!
