Ingredients 

Main Ingredients

  • 4 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 cups Tomatoes, chopped
  • 1 cup Coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt to taste
  • 2 tablespoon Oil
  • 1 cup Water as needed

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until onions are translucent.
  3. Add curry powder, cumin, turmeric, and chili powder. Cook for another minute.
  4. Add potatoes and tomatoes. Stir well to coat with spices.
  5. Pour in coconut milk and water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  6. Season with salt to taste. Serve hot.
