Ingredients 

Main Ingredients

  • 500 g Pork shoulder, diced
  • 2 tablespoon Vegetable oil
  • 1 large Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry powder
  • 1 teaspoon Chili powder
  • 400 ml Coconut milk
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onions and cook until they are soft and translucent.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Add the pork and cook until browned on all sides.
  4. Stir in the curry powder and chili powder, and cook for another minute.
  5. Pour in the coconut milk and chicken broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the pork is tender.
  6. Season with salt and pepper. Stir in the lime juice and cilantro just before serving.
