Ingredients

  • 8 oz rice noodles
  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup vegetables (e.g., bell peppers, carrots), sliced
  • 2 tablespoon green onions, chopped
  • 1 tablespoon sesame oil

Instructions 

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, sriracha, lime juice, garlic, and ginger until smooth.
  3. Heat sesame oil in a pan over medium heat. Add the sliced vegetables and cook until tender.
  4. Add the cooked noodles and peanut sauce to the pan. Toss to combine and heat through.
  5. Garnish with chopped green onions before serving.
