Spicy Butternut Squash Soup
A warm, spicy butternut squash soup perfect for chilly days.

Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 pinch salt to taste
- 1 pinch black pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the cubed butternut squash, vegetable broth, cumin, and chili powder. Bring to a boil.
5. Reduce the heat and simmer until the squash is tender, about 30 minutes.
6. Use a blender to puree the soup until smooth. Be careful with the hot liquid.
7. Season with salt and black pepper to taste.
8. Serve hot and enjoy!
