Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 can diced tomatoes (400g)
  • 1 can chickpeas, drained and rinsed (400g)
  • 4 cups fresh spinach
  • 2 cups vegetable broth
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another minute.
  4. Add diced tomatoes and cook for 5 minutes, stirring occasionally.
  5. Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  7. Season with salt and pepper to taste. Serve hot.
