Spiced Chickpea and Spinach Stew
A hearty and flavorful stew made with chickpeas, spinach, and a blend of spices.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 can diced tomatoes (400g)
- 1 can chickpeas, drained and rinsed (400g)
- 4 cups fresh spinach
- 2 cups vegetable broth
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another minute.
Add diced tomatoes and cook for 5 minutes, stirring occasionally.
Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in fresh spinach and cook until wilted, about 2-3 minutes.
Season with salt and pepper to taste. Serve hot.
