Ingredients 

Main Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Ginger
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until soft.
  2. 2. Add the minced garlic, ground cumin, ground coriander, and ground ginger. Cook for another minute.
  3. 3. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until the squash is tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot and stir in the coconut milk. Season with salt and pepper to taste.
  5. 5. Serve hot, garnished with a swirl of coconut milk or a sprinkle of fresh herbs if desired.
