Ingredients 

Pancake Batter

  • 1 cup spelt flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoon melted butter

Instructions 

  1. In a mixing bowl, whisk together the spelt flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the egg and then whisk in the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a frying pan over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve warm with your favorite toppings.
