Ingredients

  • 400 g spaghetti
  • 150 g pancetta diced
  • 2 large eggs
  • 1 egg yolk
  • 100 g Parmesan cheese grated
  • 2 cloves garlic minced
  • to taste black pepper freshly ground
  • to taste salt

Instructions 

  1. 1. Cook the spaghetti in a large pot of boiling salted water until al dente. Drain and set aside.
  2. 2. In a skillet, cook the pancetta over medium heat until crispy. Add the minced garlic and cook for another minute. Remove from heat.
  3. 3. In a mixing bowl, whisk together the eggs, egg yolk, and grated Parmesan cheese.
  4. 4. Add the cooked spaghetti to the skillet with the pancetta and garlic. Pour the egg and cheese mixture over the pasta, tossing quickly to combine. The heat from the pasta will cook the eggs.
  5. 5. Season with freshly ground black pepper and salt to taste. Serve immediately.
