Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 medium red bell pepper diced
  • 1 medium avocado diced
  • 1 cup cherry tomatoes halved
  • ¼ cup cilantro chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine cooked quinoa, black beans, corn, red bell pepper, avocado, cherry tomatoes, and cilantro.
  5. 5. In a small bowl, whisk together olive oil, cumin, chili powder, salt, and black pepper.
  6. 6. Pour the dressing over the quinoa mixture and toss to combine.
  7. 7. Serve immediately or chill in the refrigerator for later.
