Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado diced
  • ¼ cup cilantro chopped
  • 1 lime juiced
  • 2 tablespoon olive oil
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
  3. 3. In a large mixing bowl, combine cooked quinoa, black beans, corn, red bell pepper, avocado, and cilantro.
  4. 4. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve chilled or at room temperature.
