Main Ingredients
- 4 pieces Chicken Breasts boneless, skinless
- 2 tablespoon Olive Oil
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 0.5 teaspoon Salt
- 0.5 teaspoon Black Pepper
- 1 cup Corn Kernels fresh or frozen
- 1 cup Black Beans drained and rinsed
- 1 cup Diced Tomatoes canned or fresh
- 0.5 cup Shredded Cheddar Cheese
- 0.25 cup Chopped Cilantro optional, for garnish
1. In a mixing bowl, combine chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
2. Rub the chicken breasts with olive oil and then coat evenly with the spice mixture.
3. Heat a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
4. Remove the chicken from the skillet and set aside. In the same skillet, add corn, black beans, and diced tomatoes. Cook for 3-4 minutes, stirring occasionally.
5. Return the chicken to the skillet and sprinkle with shredded cheddar cheese. Cover and cook until the cheese is melted.
6. Garnish with chopped cilantro if desired. Serve hot.
