South African Melktert

Ingredients 

Crust

  • 1 cup flour
  • ½ cup sugar
  • ½ cup butter melted
  • 1 egg beaten

Filling

  • 4 cups milk
  • 1 cup sugar
  • 3 tablespoon flour
  • 3 tablespoon cornstarch
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon for dusting

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, sugar, melted butter, and beaten egg to form the crust. Press into a pie dish.
  3. Bake the crust for 15 minutes or until golden brown. Let it cool.
  4. In a saucepan, heat milk until warm. In a bowl, mix sugar, flour, and cornstarch. Add beaten eggs and vanilla extract.
  5. Gradually add the warm milk to the mixture, stirring constantly. Return to the saucepan and cook over medium heat until thickened.
  6. Remove from heat and stir in butter. Pour the filling into the cooled crust.
  7. Sprinkle with ground cinnamon. Refrigerate until set, about 2 hours.
